What an amazing revelation! Believe it or not, according to historian, Adam D. Shprintzen — Chicago was, in many ways, the epicenter of organized vegetarianism in America from 1893 until at least the 1920s. Check out his interview (Chicago, vegetarian capital of America (c. 1905))
